But after some searching I found Autumn, over at It’s Autumns Life. I did a basic search for: Chicken Keto and up came this delicious looking salad. So, I had to try it.

Soup in a jar, or a bowl
The ingredients go into the jar, but the soup, when ready, goes into a bowl. At least for me it does. But maybe next time I’ll try eating it out of the jar, it will make drinking up the last of the broth so much simpler.

I love Friday. Who doesn’t? Well maybe people that work the weekend shift. Maybe they don’t love Fridays, but I start getting that light headed, giddy feeling right about now. It’s especially awesome since it’s an extended weekend and we’re going to visit my in-laws.
So, what did you all have for lunch today? It is Friday after all. You know, eat-out day. That one work-day, although others do this every day (ahem), that you can eat out. I’m not against this by any means. In the almost year that I’ve worked in my new role, I’ve got out less than 10 times. Why you ask? Well have a look at the below picture. This is why.

Experimenting with flavour
I’m back! Well, I wasn’t really gone, but I haven’t been “here”. I’ve been busy making salads, trying out new things and generally enjoying the summer. I made an entirely new salad yesterday and it was pretty good (see my suggestions to improve). I tried it with my family last night at dinner (without meat) and I’ve got it in my lunch for today. Do you like grilled vegetables? I do and I figured I could turn that love into a salad and here’s how:
Work is more fun with friends
Some new stuff is happening this week, a change to a favourite and something not yet tried. Plus, this week I was fortunate enough to have a very close friend ask if we could make the salads at her house. She’s looking to add some convenience and of course deliciousness to her week. It all started with a glass of wine.
I’ve got beef in my Mason Jar Salad!
I was thinking, I love chicken and as you can see, I use it in most of my salads. But I also love beef. So I did some research to see how I could fit some Steak into my jars. Normally you lay warm medium rare steak over crisp greens and drizzle with your favourite dressing. I improvised!

OK, so yesterday I thought I was on the ball. Yup, we were busy with my son for an end of year activity (he’s an Air Cadet) and didn’t have a ton of time, but I went shopping and got everything I needed for this weeks salads. I had this. Or, so I thought.

So this is not a regular post, I’m going to report on my last weigh in (from Thursday), plus update you with two new salads and (drum-roll), a new mason jar video.

I’ve told most people this story, but perhaps not everyone. As I mentioned last week, I was in Punta Cana (see my resort review here) and while on an excursion, my phone (Samsung S6 Edge) sustained water damage. I had forgotten it was tucked in my life vest and I jumped into the ocean to snorkel. It did turn on after being bagged in rice and soaked in Isorpopyl alcohol. But the battery started to expand. I’m currently waiting on a battery replacement, so fingers crossed.

I admit, I was a bit worried when I got on the scale at tonight’s meeting. I mean, it was a long weekend, we traveled, ate out and visited family (6 hrs away). But at each lunch I would bring out a mason jar salad and at dinner … well, I would give it a really good effort. But come on, I discovered a new wine to add to my “big girl wine list”. It’s called Moscato (thanks Lina). Mmm. And the chips and dip while we played cards every night. *sigh* I love chips. Not just mason jar salads

I do love the convenience and the of course, the deliciousness of the mason jar salads. But my journey to eating better doesn’t stop there. A friend of mine at work, an inspiration to physical fitness, asked me what I had had for breakfast one day. Well, on that particular day, I had forgotten my oatmeal on the counter at home, so other than a tea, no breakfast. She looked at me in complete shock. What? No breakfast? Plus, the one you were going to eat had no protein. You can’t do that. She then cut our meeting short and suggested (strongly) that I go get something to eat. So I did.
