Comfort salads, who knew?

OK, so yesterday I thought I was on the ball.  Yup, we were busy with my son for an end of year activity (he’s an Air Cadet) and didn’t have a ton of time, but I went shopping and got everything I needed for this weeks salads.  I had this.  Or, so I thought.

Chicken disaster

Then just before we ate, I placed the chicken in the oven, same thing I do every Sunday.  450 degrees for 22 minutes.  The chicken is perfect every time.  If you pay attention.  After setting the timer, we ate and then watched a couple tv shows.  Then I realized that I was forgetting something.  Oh yeah, the CHICKEN!!!

 

Needless to say, I had no salads prepared for today.  That sucks.  But on my way home I purchased more chicken and this time I paid attention to the timer.

After last weeks disastrous attempts to create new salads, I thought I would lean towards the ones that I really enjoy eating.  But if you had told me, last year, that I would think of salads as comfort food, I would have laughed.  Comfort food?  Hmmm.

  1. Mashed potatoes
  2. Roast beef and gravy
  3. Creamed anything
  4. Chips and dip
  5. Homemade macaroni and cheese
  6. Veggie lasagna (not that healthy, believe me)
  7. Curry chicken with rice

Really, I have a long list of comfort foods and you’ll notice … salads aren’t on the list.  But something has happened in the last 6 months, I like salad.  I enjoy making it, eating it and best of all I love knowing that I’m eating well.

Now that doesn’t mean I won’t get creative again, just taking a break this week.  I’ve already got one in mind … Steak & Mango salad.
