Just a quick check-in, it seems that I forgot my fork when packing my lunch today and only figured that out when I sat down to eat. I could have walked to the cafeteria to pick up a plastic fork, but I was working on a task and really didn’t have the time, so I improvised. It seems that you can eat a salad with a spoon. My husband and I walk on Wednesday nights, at an indoor track, while our son attends Air Cadets. Last night, while walking, I caught my reflection in the window as we finished our lap, I averted my eyes and said to my husband “I’m not ready to look left … yet”. This will be a short post, work is busy but I wanted to express how I both enjoy what I’m eating and show that I do eat what I make.
Enjoying the fruits vegetables of my labour. So this week I made three different types of mason jar salads: Chicken Fajita, Black Bean & Quinoa and Mixed. To be honest, the last one was created from what I had in the crisper. My oldest son really enjoys vegetables so I knew he’d like this one. Well, so did I.
