I’ve seen these mason jar omelettes but I’ve been hesitant to try them. The idea of putting the jars in the oven just seemed odd to me. But this weekend, while researching some recipes for Keto, I found one and had to try it.

I scour websites looking for recipes, usually I look at the images first because if it doesn’t look good, chances are it doesn’t taste good. I test those out that make the short list. Driving home from Sudbury, Ontario tonight, I thought to myself “is there anything at home that I can have for my lunch”. Unfortunately, the answer was no. I shop weekly so ensure that my salad ingredients are fresh and crisp. That meant, when we arrived home at 8pm, after being away, that I dropped off my DH and off I went shopping. But, two hours later, groceries purchased, puta away, cooked, chopped, diced and jarred.
Can I have two salads please?
This is a quick post. Sometimes there are those things that we like so much, that we want to have more. Food is like that for me.
What I’m doing
I am now in month two of the metabolic doctor supervised plan. If I don’t include last Thursday, as that was February 2, then I have lost a total of 12lb for the month of January. I keep getting asked about the plan, so I decided to put together a document that highlights what I’ve been doing this past month.

My scale and I have called a truce
There are so many studies, websites, books and probably Twitter posts about not weighing yourself everyday. But do I listen? Nope. So each morning I would wake up and weigh myself. Some mornings I would be thrilled, others I would feel defeated, either way it would set the tone for the entire day. So I have called a truce with my scale and I feel liberated.
Experimenting with flavour
I’m back! Well, I wasn’t really gone, but I haven’t been “here”. I’ve been busy making salads, trying out new things and generally enjoying the summer. I made an entirely new salad yesterday and it was pretty good (see my suggestions to improve). I tried it with my family last night at dinner (without meat) and I’ve got it in my lunch for today. Do you like grilled vegetables? I do and I figured I could turn that love into a salad and here’s how:
Work is more fun with friends
Some new stuff is happening this week, a change to a favourite and something not yet tried. Plus, this week I was fortunate enough to have a very close friend ask if we could make the salads at her house. She’s looking to add some convenience and of course deliciousness to her week. It all started with a glass of wine.

OK, so yesterday I thought I was on the ball. Yup, we were busy with my son for an end of year activity (he’s an Air Cadet) and didn’t have a ton of time, but I went shopping and got everything I needed for this weeks salads. I had this. Or, so I thought.

Have you heard the saying “Do something for 21 days ….” And it becomes a habit. After 10 weeks of Salad prep I am proud to say that making them has become a habit I love. I even tried to think up a new recipe this week, Veggie Goat Cheese and Chicken, you will see it pictured below.

Week 8 started off kilter. Normally I reserve Sundays for meal prep and while I knew in advance that most of my day was going to be spent at a Women’s Rock Your Biz function, I was stumped come prep time. Luckily I had gone to the big box store on Saturday, so that left just a quick “outside” aisle shopping trip to the local grocery store. I say “outside”, because every time I can do the outside aisle of the grocery store, I do an a little inner fist pump.

Week 7 is here and I can hardly believe it. While my oldest son and I made the salads, I mentioned that this is the 7th week of mason jar salads we’ve created. He was just as surprise as I was. Time has really flown by. I can honestly say that I have never, in my entire life eaten as much salad (vegetables) as I have during this part of my plan. *patting myself on the back*

Week 6 is here and this week I let my boys each choose a favourite salad, with some slight modifications. This is an odd week, as you can see I’m posting this on Monday and not Sunday. Not because I forgot to post, but because we just got home from being away for the long weekend (Family Day). Week 5 Mason Jar Salads

Week 5 is here and so are two new salads (we kept the Asian one with a bit of a twist). My family is looking forward to the Chicken Caesar with Kale. I’m up late today because it seems that my “plan” needs some tweaking. For the last month, I wake up Sunday morning, play Xbox (Elder Scrolls Online, ESO) with my husband and together we prepare lunch. At about 2ish, I start thinking of food preparation.
