Living on a cloud

A cloud bread that is.  Have you tried this?  What a great way to get the “bready” feel in an appetizer without all the carbs.  I’ve heard about the bread but never really gave it much consideration.  Until today.

While creating my weekly menu plan, I searched for savory snacks and it lead me to The Big Apple Mama site.  Here I was presented with cloud bread.  WHAT?  Yup, cloud bread.  This stuff is basically made up from eggs and cream cheese.  OK, there’s a few steps to get there, but really it’s so simple.

  I ended up trying the Rosemary Cloud Bread.  My plan was to make it with Jalapeno pepper rings.  Now, I didn’t actually have any Jalapenos on hand, but I did have some hot pepper rings.  So I used them.  I used fresh farm eggs (from my boss’s farm) to make these, so I got a heck of a lot out of this recipe.  18 in fact.  I used the first 6 to mimic the recipe provided.  then I played with things a bit.  Martin is not a fan of either jalapenos or hot peppers, which for the life of me I don’t get.  He likes spicy food.  Maybe it’s the pickling.  But no.  He doesn’t like the jalapeno poppers either.  *sigh*  So, for his six I substituted sliced green onions.  Then for the last six, I decided to substitute the jalapenos with rosemary.    See pictured above.  SO good.  I just love rosemary.  Mmmmm.

 

Well, I’ve got to get back to work, I’ve got to finish planning my weekly meals, go shopping, jar up my salads and go pick up my son from the sport competition.
