Where’s the beef?

This is not only a catch phrase made popular by Clara Peller in 1984.  But it was also my question when looking at all my past salads.  Sure, I did the Mason Jar Steak Salad, but since then I haven’t really played around with meat other than chicken.

Taco Beef Salad

So this wasn’t my idea, not at all.  To me, adding beef means steak, but when looking for a new salad this week I found this one on Fresh Mama’s site.

I had this salad yesterday and WOW, it was delicious!  Great combination of taco seasoning, beef and the crunch of veggies.

UPDATE on the exercise routine …. ((insert drum roll)), I have been getting up early every work day (3wks so far) to climb onto the treadmill and sweat it out for 30 minutes.  I’ll be honest, once or twice I’ve tried to talk myself into NOT getting up, but somehow I argue myself out of bed.  My trick?  Keeping my running shoes and work out cloths right beside the bed has been a deal breaker.  BEST idea ever.
