Some new stuff is happening this week, a change to a favourite and something not yet tried. Plus, this week I was fortunate enough to have a very close friend ask if we could make the salads at her house. She’s looking to add some convenience and of course deliciousness to her week. It all started with a glass of wine.
Actually, the day started off pretty much like it normally does on a Sunday. I had been to my friends Rachel and Jon’s house on Saturday for an awesome BBQ. I made Salted Caramel Triple Chocolate Brownie Trifle. *sigh* that’s a long name. I’ve made the traditional(ish) trifle with custard and fruit for years, but I wanted to try a chocolate version and WOW, it’s pretty good.

I’ve made this trifle two weekends in a row, I’m a bit “chocolated out”. So for the next BBQ we attend, I’ll be making the traditional berry trifle.
I’ve been wanting to make a Greek style salad with pasta so I decided to reduce some chicken from my Mediterranean salad and replace it with Gluten Free Fusilli. But I also felt like something new, say “hello” to the BLT with Egg salad. You already know I like egg salad, but I learned a lesson about making egg salad mason jars, so maybe this will be the compromise.
Katie had reached out and asked if I could come to her house to make the salads together, how much fun will that be? The salads had been researched. I had completed all my preparation (shopping, cooking and slicing) and after lunch I went next door, bags and jars in hand.
After the wine was poured, because honestly how can two women get together to cook (OK assemble) and not have a glass of wine, we began to layer our salads.

Katie made some extra-large jars, to be used as meals for her and her husband and I’m trying out the wide mouth jars. While making salads we caught up with each other and our kids. Making salads with a friend (or friends) is way more fun!

EARLY REVIEW: Awesome salad! I just had the BLT with Egg and it was really fantastic. Like I said earlier, I really like egg salad, but add in bacon, cheese and tomatoes … well, yummy.
