No fork, no problem

Just a quick check-in, it seems that I forgot my fork when packing my lunch today and only figured that out when I sat down to eat.  I could have walked to the cafeteria to pick up a plastic fork, but I was working on a task and really didn’t have the time, so I improvised.  It seems that you can eat a salad with a spoon.

On another note, so happy that I made some changes to this salad, Loaded Tuna.  It was good before, but now it’s awesome.  I replaced the ranch salad dressing with an olive oil based dressing.  In addition I switched out the cherry tomatoes for celery and green onions.  I wasn’t really digging the squish of the tomatoes with the tuna and I missed the crunch of celery.  So delicious and filling.  You know, it’s funny but having the salad plan each week really grounds me and allows me to focus.  As per my “stated intention” last week, I’m already starting my plan for next week.  As I said, I’m delving into freezer meals and will be posting pictures this week.
