I admit, I was a bit worried when I got on the scale at tonight’s meeting. I mean, it was a long weekend, we traveled, ate out and visited family (6 hrs away). But at each lunch I would bring out a mason jar salad and at dinner … well, I would give it a really good effort. But come on, I discovered a new wine to add to my “big girl wine list”. It’s called Moscato (thanks Lina). Mmm. And the chips and dip while we played cards every night. *sigh* I love chips. Back to my weigh in, so here I was at WW, standing on the scale and I … lost. 1.5 lb. Woot!
Now, as promised, I made a freezer meal today, we had the Chicken Salsa. This is SOOOO easy. 4 Chicken Breasts, 1 can of cream of chicken soup and 1 cup of chunky salsa. Bag it and freeze it. Take it out of the freezer the night before (to thaw) and then place in the crock pot on low for 7-8hrs.
Week 6 – Freezer Meals Chicken Salsa and Beef with Mushrooms
When it was done, I shred the chicken with two forks and served it over thin egg noodles. All this and each serving was only 6 WW Smart Points
Well that’s all for tonight, tomorrow? Well I’ve got plans for a Seafood Linguine (tiger shrimp and bay scallops), using whole wheat noodles and …..(drum roll) … spiraled zucchini.
